sending...Father’s Day Ice Cream Sandwiches 06.14.2013
So, just a few days until Father’s Day and we have the perfect summery dessert to make for Dad! Our lovely Jordan wanted to make something special for her ice cream-loving Dad and she was kind enough to snap some photos in the process. Thanks, Jordan!
Get your ingredients from the list in the last image and then get to work!
1. To make the dough:
Beat butter, sugar, and vanilla in large bowl until light and fluffy. Add the egg and beat for 3 minutes. Add the flour, cocoa, baking powder, baking soda and salt and beat until a soft dough comes together. Make sure the dough is fully mixed.
2. Cutting the Cookies:
Press the dough out on a piece of waxed paper. Cover with another piece of waxed paper and roll with a rolling pin.
Remove the top piece of waxed paper and cut out shapes with a sharp cookie cutter. It is best to leave the pieces in the dough, don;t try to lift out. Lift the whole piece of dough on the paper and put it on a baking sheet and freeze for an hour or so.
3. Baking the cookies
Heat the oven to 325°F. Line cookie sheets with parchment paper and remove the frozen cookie dough from the freezer. Using a spatula, carefully transfer each cut-out cookie to the cookie sheet. You can prick each cookie with a fork in a pattern. Bake 6 minutes or until no indentation remains when touched. Let cool for 10 minutes to firm up. Let cool completely before making sandwiches.
4. Assembling the sandwiches
To assemble the sandwiches just put scoops of the ice cream on the cookies and squish!

These are great! So torn between the margarita in hand and the boho!! But I think I would go with the yellow since it would match my kitchen.

Ok I love every single one of these plates but my style is bright and bold. For dinner parties I dress in brights, serve brightly colored food and decorate with as much color as possible.
